Italian Corn with Cotija

In a large skillet, over medium heat, lightly brown corn on all sides, 10 minutes or so. Add all remaining ingredients stirring thoroughly until creamy. Cook for approximately 10 minutes or until slightly brown and bubbling. Serve immediately. Serves 6 to 8.

2 – 1 LB bags of Birds Eye frozen Baby Gold & White Corn

2 tablespoons canola oil

Freshly ground black pepper

1/4 cup mayonnaise

1 – 2 Tbs. of lime juice (according to taste)

3 Tbs. of mom&me® Premium Italian Hot Pepper Sauce (according to taste)

1/4 cup grated cotija cheese
